We just sent out an appeal with a remittance envelope that said to check in a box if they wanted to receive all communication from us through email only. How should I set this up in RE? I want to make sure they show up for all email mailings, but I don't want to mark them as "Do Not Mail", because when I do queries, I make sure I exclude all "Do Not Mail" people for various reasons. Has anyone ran into this and how did you handle it? Thanks!
I would give them a solicit code of Email Only...

I second what Nicole suggested - a solicit code. I'd also recommend thinking through a plan / options you want for solicit codes. I am trying to get this figured out for our org. Some prefer no phone calls, some email only. Based on past forums I've read I'm looking at all worded "no..." so it will be clearer and easier to query/filter on.
