When an donor who has an Individual record in Raisers Edge dies and has already set up a Planned Gift on the Ind record, do you create a new Org record to record the giving from the estate, or can you track those gifts on the Individual's record? If gifts go on the Ind record, are there any tax implications in doing so?

You can track those gifts on the individual's record.  Just make sure that it is added as a legacy gift type - this will give you the option to specify that the giving is coming from the estate.
